Mozzarella in carriage

Presentation

Mozzarella in carrozza is an Italian dish from Naples that was born with the idea of creating a delicious recipe using the ingredients that usually remained in the kitchen. Here I prepare the classic version only with mozzarella, but you can enrich it as you prefer by adding, for example, an anchovy, a basil leaf, some ham or something else.

Ingredients:

  • 200g of mozzarella
  • 8 slices of bread
  • about 50g of soft wheat flour 00
  • 4 eggs
  • about 100g of breadcrumbs
  • sunflower oil for frying
  • salt to taste

Preparation:

Mozzarella preparation

1 Cut the mozzarella into slices about 7-8 millimeters thick, 2 arrange them on a double sheet of absorbent paper, 3 cover with another double sheet of absorbent paper and press gently on the slices so as to absorb as much liquid as possible then it could ruin the breading.

Bread filling

4 Distribute the slices of mozzarella on a slice of sandwich bread, 5 cover with another slice of bread and press on top with your hand to compact the sandwich well. 6 Once this is done, trim the edges of the sandwich with a knife in order to obtain a perfect square shape.

Breading

7 After cutting each sandwich along the diagonal so as to obtain two equal triangles, take each sandwich thus obtained and dip it first in the flour, then in the egg and finally in the breadcrumbs. 8 You must be careful that the three ingredients adhere well on all sides of the sandwich and after having dipped it in the egg, place it on a plate so that it loses the excess and does not form lumps when you then pass it in the breadcrumbs. At this point put the breaded sandwiches in the refrigerator for 30 minutes. 9 Proceed with the second breading only with egg and breadcrumbs.

Frying and plating

10 Once the breading is complete, using the knife, give the sandwiches a shape that is as regular as possible and then put them back in the refrigerator for another 30 minutes. 11 When the sandwiches have firmed up, fry them in sunflower oil at 170°C. Every 30 seconds or so turn them in the oil so that the breading has a uniform color. 12 When they are well browned put them on a triple layer of absorbent paper and salt them to taste. Serve them while still hot and enjoy your meal!

Advise

  • For perfect frying, make sure that, before immersing the mozzarella in carrozza, the oil is between 170°C and 180°C.
  • If you want to prepare a slightly more rustic version you can use homemade bread instead of bread.
